Vitamin A plays a role in several important physiological processes, including vision, embryonic development, gene expression, and immune function. The major source of dietary vitamin A is in the form of provitamin A carotenoids, which are found in vegetables, fruits and grains, and about one-third is consumed as preformed vitamin A, which is found in dairy and meat products. Provitamin A carotenoids include beta-carotene, alpha-carotene, and beta-cryptoxanthin, and both alpha-carotene and beta-cryptoxanthin have about half the vitamin A activity of beta-carotene. Carrots are the major contributor to both alpha- and beta-carotene, and cantaloupe, broccoli, squash, peas, and spinach also contain beta-carotene. Carotene is the hydrocarbon form of carotenoids. Carotenoids cause plants (such as fruits and vegetables) to present bright coloration such as orange, red, or yellow. When carotenoids are digested they are converted into Vitamin A, an essential nutrient for preventing cellular damage. Carotene is found in three different variations: alpha-carotene, beta-carotene (most common), and gamma-carotene. The beta-carotene content in the blood is often tested if an individual displays retina or bone problems. A healthy amount of beta-carotene in the bloodstream is approximately 50 to 300 mcg/dL.
