Staphylococcus aureus enterotoxins (SEs) are heat stable enterotoxins that are responsible for gastroenteritis resulting from ingestion of contaminated food. Many isolates contain multiple SEs. There are at least 5 traditional serotypes (SEA,SEB,SEC,SED, SEE), and some more recent additions (SEG,H and I). They are serologically distinct proteins, but have similar biological activity.
SEA is the most prevalent cause of food poisoning.
