Description

Galactose-alpha-1,3-galactose, commonly known as "Alpha Gal" is a carbohydrate found in mammalian meat products. Bites from the lone star tick have been implicated in the development of a delayed allergic response caused by the consumption of mammalian meat products. Blood tests for IgE response indicating alpha gal allergy have not been approved by the FDA, but are available and are in use. The allergy most often occurs in the central and southern United States, which corresponds to the distribution of the lone star tick. The allergic reaction is delayed-onset, occurring several hours after the consumption of mammalian meat products, instead of the typical rapid onset with most food allergies. After the delayed onset, the allergic response is typical of an IgE mediated allergy (and most food allergies), including hives, angioedema, gastrointestinal upset, and possible anaphylaxis.
